I'm not sure if they're too fresh or what - ideally you want them to age in the refrigerator for a couple days - but they can sometimes be a bit crumbly for my taste. They don't make them often, but when they do, the pistachio macs at J Pistone are very good - even though they're ridiculously big and not made out of ground pistachios.<br /><br />When she has the time, Regina's going to be doing a post on an absolutely awesome class we took in New York last week. Pistacia Vera is amazing. My friend lives right around the corner in German Village and we go AT LEAST once during my visits. Pistachio and passion fruit are my favorites too.
